  • country ham known as prosciutto
  • sage
  • some pepper
  • some oil
  • toothpick


  1. take the meat put some pepper on both side, no salt as the ham is salty enough
  2. top the meat with the ham, put on top of the ham some sage leaves
  3. fix everything with some toothpick
  4. put some oil in the pan and fry the meat on the plain side for 2-3 minutes turn it and fry it for another 1-2 minutes
  5. remove the toothpick


  • Don’t fry the side with the ham and sage too lang. The sage can get bitter and the ham will dry out.
  • Saltimbocca goes very well with all kind of pasta or risotto.
