- take the meat put some pepper on both side, no salt as the ham is salty enough
- top the meat with the ham, put on top of the ham some sage leaves
- fix everything with some toothpick
- put some oil in the pan and fry the meat on the plain side for 2-3 minutes turn it and fry it for another 1-2 minutes
- remove the toothpick
- Don’t fry the side with the ham and sage too lang. The sage can get bitter and the ham will dry out.
- Saltimbocca goes very well with all kind of pasta or risotto.
